Sweater Party Pasta Salad

Occasionally, I make parties for my friends that sell their wares. It gives me an opportunity to go shopping , have lunch, drink a glass of wine, and catch up with the girls. I have been serving a pasta salad , made with asparagus, pesto, cherry tomatoes, pignilo nuts and feta cheese.

Its always a hit and so easy to make. This salad will feed a crowd.
Since I have gotten so many requests for the recipe here goes.

3 boxes of penne-cook according to the directions on the box
3 bunches of asparagus-trim of the ends-cut into thirds-blanch-let the asparagus come to a boil
for a 3-4 minutes and then put them in cold water. Drain.
3 boxes of cherry tomatoes . Cut them in half. If you can find yellow tomatoes, I like to mix them in as will to add .
color to the salad. (I had a bunch of heirloom tomatoes, so I used them and that was
fantastic).
3 packages of feta cheese- Cut into cubes , don't worry if it crumbles.
4-6 ounces of pignoli nut toasted just til they are slightly brown
2 medium containers of the best pesto you can find. I try to but mine at the local butcher shop or farm stand, but I have used pesto that I have purchased at the supermarket. It work just as well in a pinch.

Combine everything on a large platter.

You and your pasta salad will be the hit of the party.
