Saracen is now The Georgica , Matt Levine of The Eldridge is taking over the Saracen space in Bridgehampton: "The restaurant will be renamed 'The Georgica' after the pond that it’s on (which they will be sharing with Ron Perelman), and will feature celebrity chefs from 'Hell’s Kitchen." Trotting out dishes like seared diver scallops w/ sweet country corn pudding, Colorado rack of lamb w/ white truffle honey, truffle lobster mac and cheese, and white truffle Manchego ravioli .
After 11pm, dining tables are replaced with cocktail tables, and a lounge , couch-strewn waiting area in the room's center, with imported NYC DJs spinning tunes from hip hop to house.
